		<description>Oh yes Paula..  The girls are huge fans of veggies of all sorts.  It&#039;s nutty, but we seriously use broccoli and asparagus as a bribe to get them to eat higher calorie items. (much in the same way i used to use dessert to bribe their older brother to eat his green beans - just a complete flip of food groups)  

The garlic stock isn&#039;t as garlicky as you would think, it&#039;s pretty mellow. SO the end result is a Risotto that has flavor but isn&#039;t overpowering and the girls seem to really like the texture and richness of it all.</description>

3 large heads garlic
1 tablespoon olive oil
Kosher salt, 
Pepper
10 cups water

&lt;strong&gt;Method:&lt;/strong&gt;
Heat oil,  on medium heat - stir in peeled and crushed garlic cloves and cook, until translucent are a bit mushy, about 15 minutes. Don&#039;t let the garlic brown (it gets bitter)

Pour in the water. Bring to a boil. Lower the heat and simmer, uncovered, for at least 40 minutes.  Add salt and pepper to taste.

Stores in the freezer really well (great as ice cubes to add to sauces and pastas as well)</description>
